Honey reborn as iHoney. 

By Mike McInnes, author of the Hibernation Diet The year 2007 marks a watershed in the long history of the bee, and the honey industry.In the light of Colony Collapse Disorder and the ongoing troubles of the honey industry, this may seem a strange claim to make, but a review of other events will place this into a different perspective, and as time goes on, 2007 will become recognised as quintessentially the YEAR of the BEE. The Hibernation Diet (Souvenir, London 06) was published by a American Honey consortium, led by two visionaries (Jerry Brown and Dr Ron Fessenden), World Class Emprise.Jerry Brown is the Secretary of the American Honey Producers Association.This book, drawing on recent scientific studies, but also on studies going back many decades, establishes the case that a dose of honey prior to bed, will activate recovery physiology, and that recovery physiology is exclusively fat burning physiology. Modern obesity/diabetes is primarily caused by chronic overproduction of stress hormones, and this is increasingly recognised, in a raft of studies, as related to shortened/poor quality sleep.This in turn is directly related to the myth about "not eating late", a myth that is causing millions and millions to go to bed with a depleted liver, which causes the brain to activate stress physiology, and not recovery physiology.An  ounce or two of honey prior to bed refuels the liver, activates recovery physiology, and allows fats to be burned. Overnight chronic overproduction of cortisol inhibits glucose metabolism in all cells.Build up of cellular glucose prevents cells from clearing glucose from the circulation (diabetes).The increased glucose also prevents fats from being transferred into the mitochondria (cell furnaces) for burning (obesity).Thus we have a model for both obesity and diabetes at REST, and in particular overnight.Honey may be shown to reverse this by improving glucose metabolism, and therefore fat metabolism - again overnight. Honey activates sleep and recovery by the Honey/Insulin/Melatonin Cycle (HYMN) and this allows for optimal fat buring physiology during recovery overnight! 4 iconic studies were published in 2007, which add to, and confirm, the conclusions made by the Hibernation Diet. (See appropriate article by clicking back button then selecting article on 2007 studies. To understand why this is, and why honey always compares positively with sucrose and other refined sugars, we need to look at all the principles found in a dose of honey, compared to sucrose and other refinrd sugars.Honey is packed, rich, laden, in glucose disposing principles.What does this mean?It means that these principles improve glucose uptake into cells and then improve both the storage and metabolism of glucose, in other words the oxidation (burning) of glucose all the way to carbon dioxide and water. Therefore glucose concentration will not rise, and more glucose will be taken up by the cells, preventing a rise in blood glucose (thus combating diabetes).This in turn allows for increased fat metabolism and disposal (thus combating obesity). These principles are many, and include vitamins, minerals, amino acids, bioflavinoids, volatiles and other ingredients, such as hydrogen peroxide and nitric oxide, that allow for optimal glucose (and therefore fat) disposal in all cells.We characterise these principles as Glucins - they act like insulin to drive glucose into cells, and optimally dispose of glucose and fats. The Glucins are antidiabetic and antiobese. These brilliant glucose disposing principles provide every dose, every spoon, and every pot of honey with both the information and active constituents to allow optimal glucose transport, delivery to cells and through to their goal of oxidation.In other words they inform honey in a way that no other refined sugar/sweetener is informed.We refer to them as iprinciples, and therefore to honey as iHoney!
